The Eat Healthy, Be Active community workshops are based on the Dietary Guidelines for Americans, 2015- 2020 and the Physical Activity Guidelines for Americans. Each of these six 1-hour workshops includes a lesson plan, learning objectives, talking points, hands-on activities, videos, and handouts. The workshops are used by community educators, health promoters, dietitians/nutritionists, cooperative extension agents, and others to teach to adults in a wide variety of community settings.

As part of a complementary approach, the Live Healthy! program provides behaviorally-focused nutrition education and obesity prevention activities for adults and children. Delivered through single and series workshops in a variety of settings such as schools, community centers, senior centers, food pantries, community colleges and health care settings, Live Healthy! aims to change attitudes and behaviors when it comes to choosing nutrient-dense real food.

Food MD is a prescription program designed to increase access to healthy fresh fruits and vegetables and decrease the risk for developing chronic diseases like diabetes, high blood pressure, cholesterol disorders and obesity. This program includes: complete health screening, nutrition workshops, fresh fruits and vegetables, New York Common Pantry services, free biweekly pantry distribution, and social services.

If you are overweight, then any weight loss may help cut your odds of getting heart disease and diabetes. On a sunny Friday morning in San Pablo Huitzo, a town in the Valles Centrales region of Oaxaca, Mexico, a half-dozen women are gathered for a workshop on making alegrías, a healthy, granola bar-like snack made with popped amaranth seeds. Their ingredient list is short: water, honey, raisins, a form of raw cane sugar known as piloncillo, and lime juice.


The alegría gathering is one of six weekly microenterprise workshops that the nonprofit Puente a la Salud Comunitaria (Bridge to Community Health) holds with 25 different groups in Oaxaca. Founded in 2003 by two American volunteers in Oaxaca seeking a solution to the high rate of birth defects and childhood malnutrition in rural areas, Puente quickly hit on the idea of reintroducing amaranth into the local diet, explains Pete Noll, the organization's executive director.


Farmers like Cruz who grow amaranth have also developed a repertoire of recipes for the plant. Although the seed, flour and leaves of the bushy plant can all be consumed, cereal (the popped seeds) is the most commonly used form in Mexico. Cruz's mother likes to add the leaves to water and blend them with lime peel to make an agua fresca.


Trilling has taught some of these recipes at her school, and incorporates fresh amaranth in the summer months as part of her staff breakfast with hard-boiled eggs. "Especially during the amaranth appreciation campaign," she adds, "people got excited" about the idea of using amaranth as an alternative to granola, in crepes, and in wafers Trilling makes with her students with amaranth flour and coconut.

LSM is an acronym used in the retail and hospitality industries for Local Store Marketing, which is a specific plan targeted at potential customers within the three to five-mile radius around a store location. The LSM Diet offers restaurant and retail operators a workshop to learn how to generate more sales through the use of local store marketing tactics in a 52 week program similar to following a diet.

Gardening and Nutrition Program provides support and guidance for DC school gardens. The center engaged 4-H nutrition volunteers and UDC students as volunteer resources. Volunteers engage to implement programming with the UDC students as well as to conduct nutrition workshops and activities. A space at the UDC Green Roof is cultivated to plant and grow seedlings to support the garden programs at schools and centers. Students are instructed on how to plant, maintain and harvest. UDC 4-H Soccer Program is dedicated to the promotion and organization of youth soccer at both the recreational and competitive levels. The program is devoted to the development of its players and coaches in order to allow them to reach their fullest potential and to instill sportsmanship and friendship while developing a healthy living, community, and leadership spirit among all of its members. Youth in the program are physically active daily as they practice and master the skills involved in becoming effective athletes. They receive guidance and encouragement from their coaches, parents, and school professionals. College athletes also provide guidance by talking to the youth about the importance of avoiding drugs and alcohol, and eating healthy food, to maintain optimal health to become great players.
